Four Cheese Potato Flake Chicken:
Rating: 9 out of 10

Well, a lot of my friends and family know how I can come up with some crazy food creations. Well tonight, my friend Diana aka Honey Bunny (Long story but that is another blog..lol) were talking about different variations of making Potato Flake Chicken. Of course, I normally use the plain mash potato flake and add my own variety of stuff in the bag (Garlic powder, spices, etc.). Tonight, we decided to try the  "Four Cheese Mash Potatoes" mix (98 Cents per bag) for the flake portion.

I preheated the oven to 375 degrees, greased the pan with spray vegetable oil and lined the bottom of the pan with the mash potatoe flakes. After I washed the chicken, soaked each one with egg (You can do this with egg or without... your choice), Diana did the shake n bake style and stuck the chicken in a zip lock bag and shook it until each one was covered in the flakes. (We used chicken legs for this.) After placing each one in the pan, we stuck the chicken in the oven to cook and checked on it 30 minutes later. I sprayed the top layer with grease to try to avoid the "burnt bread" effect to happen. After 45min-1hour, we removed the pan and let it cool for a bit. Along with the chicken, we made mac/cheese, baked beans and butter flake bread.

Ashley:  9/10: Only because it still lacked some flavor. Maybe next time I will add more spices to the egg batter.

Amanda: 9/10 : It was not warm (Ashley- Because she took too long to get here)

Diana: 8.5/10 : I particularly did not care for the egg in it. Seemed like it weighed the flakes down.
